How To Make Cod in green sauce

Step 1: We begin the preparation of our cod in green sauce, for this, we take the cod loins previously seasoned with salt and pepper and we are going to pass them through the flour, then we add to a pan a good splash of extra virgin olive oil, we take it to the fire (low heat), add the garlic and let it cook 1 minute.

Step 2: Incorporate the cod loins with the skin side down and then grab with one hand the handle of the pan and we will give back and forth movements as shown in the video, then with the help of a spoon and from time to time, we will be bathing the cod loins with the juices that are formed in the pan (cook a couple of minutes).

Step 3: Add the white wine, the fish stock and continue moving the pan with back and forth movements, cook for 5 minutes (or a couple more, depending on the size of the cod loins) we will also bathe the loins with the sauce from time to time.

Step 4: After 8 minutes, add the parsley, stir the pan, cover, cook for 2 minutes, remove from heat and enjoy this delicious cod in green sauce.
