We begin the preparation of our shrimp risotto, for this, in a pot with a little olive oil and medium heat, add the shrimp, a pinch of salt and we will cook for just 1 minute, then remove them from the pot and set aside, then add the onion and let it cook for a couple of minutes.

Add the rice and let it cook for a couple of minutes, then add the white wine, let all the alcohol evaporate and then gradually add the seafood broth (stirring from time to time) first cover and when we see that there is almost no liquid left, add more broth and so on until all the broth is used up.
Step 3:
When the broth is used up and the rice is done (cooking time is about 15 to 18 minutes), remove from the heat and add the butter, stir well until it melts, then add the shrimp, Parmesan cheese, stir and our delicious shrimp risotto is ready (add fresh parsley on top for garnish).
