Step 1: To start preparing our pollo sudado, the first thing to do is to place our chicken pieces in a bowl and add the cumin, a little salt, a little pepper and with the help of our hands, stir to season all the chicken parts very well.
Step 2: In a pan over medium heat with a little olive oil, add the onion, garlic and cook for 3 minutes, then add the red bell pepper and cook for 4 minutes, add the crushed tomato, a little salt, stir and cook for 4 more minutes.
Step 3: Add the chicken pieces, the water and as soon as it starts to boil, cover the pan and cook for 20 minutes. After 20 minutes, add the potatoes and carrots, spread them around the casserole, cover again and cook for 20 minutes more or until the potatoes and carrots are well done.
Step 4: Serve the chicken pieces on a plate, add the sauce on top with the vegetables, then add some fresh coriander and all that is left is to enjoy this delicious chicken sudado.
