Ingredients
- 300 g. (1 1/2 cups) of arborio rice
- 12 asparagus stalks cut into pieces about 1.5 inches long
- 1 lt. (4 1/4 cups) vegetable stock (hot)
- 100 g. (1 cup) grated parmesan cheese
- 50 ml. (3 tbsp + 1 tsp) of white wine
- 1 onion cut into small squares
- 2 garlic cloves chopped in slices
- 40 g (3 tbsp) of butter
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our asparagus risotto, for this, in a saucepan over medium heat, add the olive oil until hot, then add the asparagus, add a pinch of salt, let them cook for 4 minutes and remove them.
Step 2: Add the onion and garlic, cook for a couple of minutes, add the rice and cook for a couple of minutes more.
Step 3: Add the white wine, let the alcohol evaporate and then gradually add the vegetable broth (the broth should always be hot when adding it) first cover the rice with the broth and start cooking (over medium heat) when you see that there is almost no liquid left, add more broth and repeat the process until all the vegetable broth is used up. When you have incorporated all the broth and you see that the rice is almost ready, add the asparagus and stir.
