Ingredients
- 400 g. of fabes (soaked for at least 12 hours)
- 1 smoked chorizo sausage (preferably Asturian)
- 1 smoked black pudding (preferably Asturian)
- A piece of bacon
- 1 onion cut in half
- 1 whole garlic clove
- 1 spoonful of powdered sweet paprika
- Water
- Salt to taste
How To Make It
Step 1: We begin the elaboration of our fabada asturiana, for it, in an express pot we add the beans, the chorizo, the black pudding, the bacon, the onion, the clove of garlic, we cover with water up to 2 fingers above and we turn on the fire.
Step 2: Add the sweet paprika powder and stir, as it gets hot we will see that it starts to foam on the surface, we remove it with the help of a skimmer, then when we see that the water is boiling, we close our express pot, lower the heat and cook for 25 minutes.
Step 3: After 25 minutes, we open our express pot (according to the instructions of your pot) and we will remove the onion, the clove of garlic and a spoonful of beans with a little broth, this we will place it in a blender or turmix and we will grind it very well.
Step 4: Add the mixture to the fabada, a little salt and stir in circular movements in the pot, it is very important not to stir introducing any spoon or kitchen utensil to the fabada, as we could spoil the beans. Let it cook for a couple of minutes and remove from the heat.
Step 5: We remove from the pot the chorizo, the black pudding, the bacon and we are going to cut them in pieces, then at the moment of serving we have 2 options, to introduce all the pieces of the meats inside the fabada and to serve or to serve the fabada and separately to serve the meats so that each diner takes what he/she wants! And this way we would have our delicious Asturian fabada ready.
