Ingredients
- 300 g. (10.5 oz / 0.66 lb) basmati rice
- 650 ml (22 oz) vegetable stock
- 1 small onion, diced
- 1 garlic clove, chopped
- 1 cinnamon stick
- 1/2 teaspoon cumin
- 1/2 teaspoon of turmeric
- 50 g. (1.75 oz / 0.11 lb) raisins
- 50 g. (1.75 oz / 0.11 lb) walnuts
- Salt to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our basmati rice with walnuts and raisins, for this, we place the rice in a colander, we take it under the tap and wash it very well until the water comes out completely clear.
Step 2: In a pot with a little olive oil and medium heat, we will add the onion, garlic and cook for 3 minutes, then add the rice and stir, then add the cumin, turmeric, cinnamon stick and stir again until the rice takes completely a yellow color, let it cook for 1 minute.
Step 3: Add the vegetable broth (hot) and when it starts to boil, cook for 4 minutes, then cover the pot, lower the heat and cook for 8 more minutes or until the water has evaporated.
Step 4: After 8 minutes, add the raisins, stir and let cook 2 more minutes, then remove from heat, add the walnuts, mix well and we have ready our rich basmati rice with raisins and walnuts, enjoy it.
