Ingredients
- 4 pieces of chopped chicken (can be thighs, hams or whatever you prefer)
- 1 chopped onion
- 1/2 green bell pepper cut into small cubes
- 2 potatoes cut into chunks
- 2 carrots cut into rounds
- 100 ml / 3.4 oz of white wine
- 100 ml / 3.4 oz of crushed natural tomatoes
- 400 ml / 13.5 oz of hot chicken broth
- 5 strands of saffron
- 1 bay leaf
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our chicken stew with potatoes, for this, we salt and pepper our chicken pieces, then, in a pan with a little olive oil and medium high temperature, we are going to seal them in all parts, with this we will get that the juices are kept inside, when you see that they are already sealed or golden brown on the outside, we remove them from the pan and reserve.
Step 2: In the same pan (but over medium heat) we will add the onion and let it cook for a couple of minutes, then add the green bell pepper and cook for 3 more minutes, then add the crushed tomato and stir, add the white wine and let it evaporate all its alcohol, add a little salt and continue cooking.
Step 3: Add the chicken pieces, the potatoes, the carrot, the chicken broth, the saffron threads, the bay leaf, stir and when it starts to boil, cover and let it cook for 20 minutes. After these minutes, remove from the heat and our delicious chicken stew with potatoes is ready.
Tips To Prepare It
When searing the chicken, only the outside of the chicken should be browned and removed from the heat, it will finish cooking later.
