Chicken with sun-dried tomatoes and spinach

Ingredients
- 4 fillets of chicken thighs
- 1 crushed garlic clove
- 80 ml. of white wine
- 140 ml. of cream or milk cream
- 60 ml. chicken stock
- 10 chopped sun-dried tomatoes (reserve some of the oil that comes in the tomato jar)
- 2 handfuls of fresh spinach
- 50 g. Parmesan cheese
- Salt and pepper to taste
How To Make It
Step 1: We begin the preparation of our chicken with sun-dried tomatoes and spinach, for this, we season our chicken with salt and pepper, then, in a frying pan at medium high temperature and with a little oil from the sun-dried tomatoes, we are going to cook it until it is almost done, 3 minutes on each side approximately (the chicken will be finished later in the sauce).
Step 2: In the same pan where we sealed the chicken, add the garlic and let it cook for 1 minute, then add the white wine and let the alcohol evaporate (2 minutes), add the cream, the chicken broth and stir, let it cook a couple of minutes more, add the tomatoes, the spinach, the parmesan cheese and continue cooking.
Step 3: We introduce the chicken fillets and let it cook for 5 minutes, adding a little of the sauce on top, remove from the heat and our chicken with sun-dried tomatoes and spinach is ready.
Tips To Prepare It
For this chicken with sun-dried tomatoes and spinach recipe, you can use chicken breast or thigh fillets.
If you don't have cream, you can substitute plain unsweetened yogurt.
