If we talk about legume recipes, in the world in recipes we have a lot and we will not stop doing, so today we bring you another that adds to the list and are these delicious chickpeas with rice, a dish that has almost everything, it is nutritious, healthy, complete and best of all is very economical, it is also ideal for eating in cold weather because it is a dish that when eaten warm, comforts the soul.
We can prepare these chickpeas with rice in 2 ways, one long and the other short, the long one is made using raw chickpeas, which we must leave to soak for at least 12 hours and in the short version or express version, they are made with canned chickpeas already cooked, this will save us a lot of time in the kitchen, in just a few minutes we have our dish ready.
Ingredients
- 400 g. (0.88 lbs) cooked chickpeas
- 500 ml. (17 oz) of seafood fumet
- 200 g. (0.44 lbs) cooked rice
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 garlic clove, chopped
- 2 tablespoons of fried tomato
- 1 tablespoon sweet paprika
- Salt to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our chickpeas with rice, for this, in a pot with a little olive oil and medium heat, add the onion, garlic, stir and cook for 3 minutes, then add the green and red peppers, stir and cook for 3 minutes more.
Step 2: Add the fried tomato, stir, then add the chickpeas, the sweet paprika, stir, cook for 1 minute (do not let the paprika cook for too long as it can burn and give a bitter taste to our dish) then add the seafood fumet, a little salt and cook for 5 minutes.
Step 3: Once this time has elapsed, add the cooked rice, turn off the heat and our delicious chickpeas with rice is ready.
Tips To Prepare It
To prepare this recipe of chickpeas with shrimp, we use canned chickpeas, remove them from the jar and place them under the tap to remove all the collagen, you can also use raw chickpeas.
