Ingredients
- 250 g. couscous
- 250 ml. of hot chicken broth
- 1 chicken breast cut into cubes
- 1 medium carrot chopped in small squares
- 1/2 red bell pepper cut into small squares
- 1/2 green bell pepper cut into small squares
- 60 g. peas
- 1 onion chopped in small squares
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our couscous with chicken and vegetables, for this, in a pan over medium heat and with a little oil, add the onion and let it cook for a couple of minutes, then add the red bell pepper, green bell pepper, carrot, stir and let it cook for 5 minutes, then add the peas and stir again, add the chicken, a little salt, a little pepper, integrate and let it cook for 10 minutes or until the chicken is done.
Step 2: In a pot or any container with a lid, we are going to add the couscous, then add the hot chicken broth and cover completely, let it cook for 4 minutes, uncover and stir.
Step 3: Incorporate the chicken with the vegetables that we had reserved and integrate very well, serve and we have ready our delicious couscous with chicken and vegetables.
Tips To Prepare It
When adding the chicken broth to the couscous, make sure it is hot and cover it completely so that it cooks perfectly (you can do this in a saucepan with a lid or in a container with a lid or cover with plastic wrap).
For this chicken and vegetable couscous, we used red bell pepper, green bell pepper, peas and carrot, but you can add any vegetables you like.
You can add a little curry powder to the chicken broth to add more flavor and aroma to the couscous.
