- 200 ml. / 6.76 oz. cooking cream or single cream
- 1 chopped spring onion
- 80 g. / 2.82 oz. chopped bacon
- 60 g. / 2.11 oz. sweet corn in kernels
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our creamy potatoes with bacon, for it, we peel the potatoes and we cut them in wheels of 1 cm of width approximately, then in a pot with boiling water, we add a little salt and we introduce our potatoes (it is important to add the salt after the water is boiling, otherwise, it will take longer to boil) we are going to cook them between 10 and 15 minutes (the time of cooking will depend on the size of your potatoes, so when you see that they have been cooking for about 10 minutes, prick them with a thin knife and if you see that the knife goes through without problems, they are ready, if on the contrary you see that the potato resists and still feels a little hard, let them cook for a few more minutes), when they are done, remove all the water and reserve them.
Step 2: In a frying pan at medium temperature and with a little olive oil, add the spring onion and cook for a couple of minutes, then add the bacon and cook for about 4 more minutes, then add the cooking cream, a little salt, a little pepper and stir, then add the corn kernels and cook for 5 minutes.
Step 3: We introduce our potatoes in the bacon sauce, turn off the heat and stir until the potatoes are impregnated with the sauce, serve and we have ready our delicious creamy potatoes.
Tips To Prepare It
When boiling the water for the potatoes, you must add the salt when the water is already boiling, never add the salt before the water boils because it will take much longer to boil.
The cooking time of the potatoes will depend on the size, therefore, when you see that they have been cooking for about 10 minutes, prick them with a thin knife and if you see that the knife passes without problems, they are ready, if on the contrary you see that the potato opposes resistance and still feels a little hard, let it cook a few more minutes.
