Sometimes we get used to cook only typical dishes from the country where we live, but the truth is that we would be missing a lot of delicious recipes that we can prepare in a very simple way at home and thus dare to know and try typical flavors from other lands and one of those recipes could be perfectly this delicious congrí or also known as congrí rice.
The congrí is a typical dish of Cuban cuisine which is prepared with black beans, rice and a special sauce that will bring a lot of flavor. There are many ways to prepare it, each cook adapts it to his taste, but the truth is that there are some basic rules to follow so that it is perfect and one of them is that at the moment of cooking the black beans, they must be a little hard since they will be cooked with the rice.
Another key point when preparing rice congrí, is to make a good sofrito, as it will be responsible for providing that wonderful flavor that characterizes this dish and among the main ingredients are green bell pepper, onion, garlic, bacon, cumin and chicharrón, the latter being optional.

Ingredients
- 500 g / 1.1 lb / 17.6 oz. of black beans
- 1.5 liters / 33.8 fl. oz. of water (for cooking the beans)
- 1 green bell bell pepper cut into large pieces (for cooking the beans)
- 1 small whole onion (for cooking the beans)
- 1 tablespoon cumin powder (for cooking the beans)
- 1 bay leaf (for cooking the beans)
- 1 cup of rice
- 1 cup and a half of the water in which the beans were cooked
- 1 cup of cooked black beans
- ½ green bell bell pepper, diced
- 1 small onion, diced
- 1 garlic clove, diced
- 125 g. / 4.4 oz. bacon
- 1 tablespoon cumin powder
- 1 bay leaf
- Salt to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our black beans, to do this in an express pot we add the black beans, water, whole onion, green bell pepper, bay leaf, cumin, stir and when we see that it begins to boil, cover and cook for 15 minutes (we must follow the instructions of our express pot).
Step 2: We begin the preparation of our congrí, for it in a pot at medium temperature and with a little olive oil, add the bacon and cook until browned, then add the onion, green bell pepper, garlic and let cook for 6 minutes, after 6 minutes add the cumin, bay leaf, stir and let cook for 1 minute.
Step 3: Add the rice, the black beans and stir, then add the water from the beans, a little salt, stir and when we see that it begins to boil, cover the pot, lower the heat and cook for 15 minutes (do not uncover the pot during cooking). After 15 minutes, remove from the heat, serve and now we just have to enjoy this delicious congrí rice.
Tips To Prepare It
When cooking the congrí, it is very important that we do not uncover the pot, since the heat would escape and would cut the cooking of the rice.
You can use any type of rice you like, but the amount of water may vary, follow the manufacturer's instructions.
