Ingredients
- 1 kg (2.2 lbs) cucumbers, cut in pieces
- 1 Granny Smith type green apple cut into pieces
- 1 garlic clove
- Juice of 1 lemon
- 2 tablespoons of sherry vinegar
- 3 tablespoons olive oil
- 2 mint leaves
- Salt to taste
- Croutons to taste
How To Make It
Step 1: To start preparing our cucumber gazpacho, add the cucumbers, apple, garlic clove, sherry vinegar, lemon juice, olive oil, mint leaves, a little salt, blend for 1 minute and a half, then refrigerate for a couple of hours, serve on a plate add croutons to taste and now we just have to enjoy this delicious gazpacho.
Tips To Prepare It
If you want the cucumber gazpacho to have a creamier texture, you can add Greek yogurt.
For a lighter texture you can pass the cucumber gazpacho through a strainer.
