Ecuadorian shrimp ceviche

Ecuadorian gastronomy is very varied, it resembles a little to the gastronomy of Peru, among the dishes that most define it we find the ceviche, the bollo, the fanesca and the sancocho de pescado, but if we walk through its streets we will find in its many street stalls incredible dishes such as the famous humitas, the bolones, the empanadas, the cevichocho, the patacones, among others.
As I have already told you in previous recipes, my favorite dishes are those served raw and today we are going to prepare one of them, it is the ceviche, but in this case the shrimp ceviche, typical of Ecuador in which we replace the shrimp with prawns, this ceviche has a perfect balance of flavors, it is super fresh, delicious and very easy to prepare.
Ingredients
- 500 gr. (1.1 lbs) raw shrimps or prawns
- 2 tomatoes chopped in small cubes
- 1 red onion, julienned
- Fresh cilantro
- 1/2 red bell pepper chopped in small squares
- 1/2 green bell pepper chopped in small squares
- 3 limes or lemons
- 1 tablespoon of ketchup sauce
- 1/2 tablespoon mustard
- Salt to taste
- Pepper to taste
How To Make It
Step 1: We begin the preparation of our shrimp ceviche, for this, in a saucepan over medium heat, add the water, the shells that we had reserved from the shrimp, a little salt and cook for about 4 minutes or until they take an orange color, then with the help of a strainer, strain and reserve the broth.
Step 2: In another saucepan over medium heat, add the reserved broth and then add the prawns and cook for 1 minute or until they take color, remove them and reserve the broth again and let it cool.
Step 3: In a bowl we will add the shrimp broth, tomato, peppers, red onion, ketchup, mustard, cooked shrimp, chopped cilantro, lime juice, pepper, salt and mix everything until it is perfectly incorporated, let it rest for 30 minutes in the refrigerator and we have our delicious shrimp ceviche ready.
Tips To Prepare It
For this shrimp ceviche recipe, you can use shrimp or prawns.
If you don't have lime, you can substitute it with lemon.
If you are a fan of spiciness, add a little chili pepper, which is great.
