One of the typical recipes of Ecuadorian cuisine is shrimp encocado, a dish prepared with coconut and shrimp or prawns, although there are other versions that use shells, crab and fish, follow our step by step videos, where we will explain in detail how to prepare this delicious encocado, a delicious recipe to eat differently in our day to day.
Ingredients
- 600 gr / 21 oz / 1.3 lb peeled and cleaned shrimp or prawns
- 1 onion, diced
- 1 garlic clove, chopped
- 1/2 red bell pepper cut into small squares
- 1/2 green bell pepper cut into small squares
- 250 ml. / 8.45 fl. oz of coconut milk
- 1 tablespoon of grated coconut
- 1 fish cube
- 100 ml. / 3.38 fl. oz of fried tomato
- Salt to taste
- Vegetable oil
How To Make It
Step 1: We begin the preparation of our encocado de camarones, for this, in a frying pan or casserole with a little oil and at medium temperature, add the onion, garlic and cook for 2 minutes, then add the red bell pepper, green bell pepper, stir and let cook for 5 minutes.
Step 2: Add the fried tomato, stir and cook for 2 minutes, then add the coconut milk, the grated coconut, stir and then add the fish cube and let it cook until it dissolves.
Step 3: Add the shrimp or prawns, cook for 2 minutes, remove from heat and our delicious shrimp encocado is ready.
Tips To Prepare It
To prepare encocado de camarones we can use prawns or shrimps, which we must clean before starting the recipe, for this, we remove the head, the tail, the shells and the intestines, a kind of black thread that is found in the upper part of the prawn.
Reserve the shrimp shells in the refrigerator, they can be used to prepare fish fumet.
