Ingredients
- 300 g. (10.6 oz / 0.66 lb) of pardina lentils
- 1.3 liters (44 oz) water
- 2 smoked sausages
- 200 g. (7 oz / 0.44 lb) cured bacon
- 2 garlic cloves, chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 tomato, diced
- 1 onion, diced
- 2 carrots cut into rounds
- 1 tablespoon of sweet paprika
- 1 teaspoon cumin powder
- 2 meat stock cubes
- Salt to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our Rioja lentils, for this, in a casserole with a little olive oil and over medium heat, add the onion, garlic and let cook for a couple of minutes, then add the green bell pepper, red bell pepper, tomato and let cook for 3 minutes, then add the carrots, stir and cook for a couple of minutes.
Step 2: Add the lentils, sweet paprika, cumin powder, stir and cook for 1 minute.
Step 3: Add the water and as soon as it starts to boil, add the stock cubes, the whole sausages, the whole bacon, stir, cover and cook over low heat for 40 minutes, after the cooking time, remove the sausages and cut them into rounds, remove the bacon and chop it, return both to the pot (rectify the salt if necessary), serve and enjoy these delicious lentejas a la Riojana.
Tips To Prepare It
For this recipe of lentejas a La Rioja, use pardina lentils, as they are more tender and we will avoid having to soak them.
You can use smoked chorizo or the sweet chorizo you like best, either Asturian chorizo or Galician chorizo, among others.
You can prepare the lentils in an express pot, but in case you do not have one, do not worry, you can use a conventional pot, the difference will be in the cooking time, being the express pot much faster.
