Ingredients

  • 10 potatoes cut into squares
  • 300 ml (10 oz) milk
  • 1.5 liters (50 oz) of water
  • 2 tablespoons of butter
  • 1 onion, diced
  • 1 garlic clove, chopped
  • 1 tablespoon cumin
  • 1.5 tablespoon achiote, ground
  • Chopped cilantro
  • Soft white cheese
  • Avocado cut in slices
  • Salt to taste

How To Make It

Step 1:

We begin the preparation of our locro de papas, for this, in a pot over medium heat add the butter, achiote, stir and cook until both are dissolved, then add the onion, garlic, stir and let cook for 3 minutes.

Add the potatoes and stir until they are completely covered, then add the cumin, salt, stir and let cook for one minute, add the water, stir again and let cook for 25 minutes or until the potatoes are soft.
