The potato locro is a traditional dish of Ecuadorian cuisine and has gained space in other cuisines worldwide such as Argentina or Peru, among others, basically consists of a creamy and delicious soup made from potatoes.
This delicious soup is ideal for the cold months where we feel like eating something warm, we can also enjoy it in our daily meals, either as a starter or main dish, we can also accompany it with picatoste, bread, cilantro, avocado or cheese, to prepare it we must use basic ingredients such as potatoes, achiote, onion, garlic, cumin, milk and cheese, among others, but we can also add grains of corn, pork or beef, and this goes a little to taste or depending on the region where it is prepared.
Ingredients
- 10 potatoes cut into squares
- 300 ml (10 oz) milk
- 1.5 liters (50 oz) of water
- 2 tablespoons of butter
- 1 onion, diced
- 1 garlic clove, chopped
- 1 tablespoon cumin
- 1.5 tablespoon achiote, ground
- Chopped cilantro
- Soft white cheese
- Avocado cut in slices
- Salt to taste
How To Make It
Step 1:
We begin the preparation of our locro de papas, for this, in a pot over medium heat add the butter, achiote, stir and cook until both are dissolved, then add the onion, garlic, stir and let cook for 3 minutes.
Step 2:
Add the potatoes and stir until they are completely covered, then add the cumin, salt, stir and let cook for one minute, add the water, stir again and let cook for 25 minutes or until the potatoes are soft.
Step 3:
After 25 minutes , remove 80% of the potatoes, place them in a bowl, mash them with the help of a fork and add them back to the pot, add the milk, stir and let them cook for about 5 minutes, serve in a deep dish, add the cheese, avocado, cilantro and now we just have to enjoy our delicious potato locro.
Tips To Prepare It
For this locro de papas recipe, you can mash the potatoes using a potato masher or a fork as shown in the video.
You can use cooking cream or heavy cream if you want the locro de papas to be even creamier.
You can also add corn kernels or whole corn to the locro de papas.
