The lomo adobado is a very traditional Spanish recipe and although in the supermarkets they sell you the marinated loins already ready, to prepare them at home is another world, once you do it you will never buy them again in the supermarket, in the first bite you will notice the big difference.
The first thing we must do to prepare this marinated pork loin recipe, is to buy a good piece of pork loin and ask our butcher to remove all the fat, although this step can also be done by ourselves at home, then we must choose some basic spices that we will name them below in the ingredients and with them we will prepare our marinade that will be in charge of giving that powerful flavor to our loin.
Once we have the marinade ready, we will bathe our tenderloin with it and we will leave it marinating for a minimum of 24 hours, although the longer it marinates, the better the result, in our case we left it for 48 hours, then we cut it into steaks to grill or bake them, we can also save steaks in packages and reserve them in our refrigerator to eat them whenever we want.

Ingredients
- 1 pork loin (approx. 1.5 kg.)
- 1 teaspoon oregano
- 1 teaspoon Provencal herbs
- 1 teaspoon garlic powder
- 2 teaspoons powdered sweet paprika
- 1 teaspoon of white pepper powder
- Salt to taste
- 100 ml / 3.4 oz of olive oil
How To Make It
Step 1: We begin the preparation of our lomo adobado, for it in a bowl we place our pork loin and add salt to taste (distributing throughout the piece), on the other hand in the glass of the blender add the Provencal herbs, oregano, garlic powder, white pepper powder, sweet paprika, olive oil and crush everything very well, then add this mixture to our loin covering it everywhere (you can do it with a brush or hands), the olive oil and grind everything very well, then add this mixture to our loin covering it all over (you can do it with a brush or with your hands) then cover it with plastic wrap and take it to the refrigerator for a minimum of 24 hours (if you leave it for 48 hours, the result will be even better).
Step 2: After 48 hours, take our marinated tenderloin out of the refrigerator and cut the fillets, then cook them in a frying pan for 1 minute on each side and our delicious lomo en adobo is ready (you can reserve the fillets in small packages and keep them in the refrigerator to eat them whenever you want).
Tips To Prepare It
The longer the lomo adobo is marinated, the more potent its flavor will be.
You can prepare the marinade with the ingredients and spices you like best.
