Ingredients

  • 300 g. of arborio rice
  • 400 g. of assorted mushrooms of your choice (in this recipe we use white mushrooms and portobello mushrooms)
  • 1 lt. of vegetable stock
  • 100 g. grated parmesan cheese
  • 50 ml. of white wine
  • 1 onion cut into small squares
  • 2 cloves of garlic, chopped
  • 40 g. butter
  • Chives for garnish
  • Salt and pepper to taste
  • Olive oil

How To Make It

Step 1:

We begin the preparation of our mushroom risotto, for this, in a saucepan over medium heat, add the olive oil until hot, then add the onion and garlic and cook for a couple of minutes, then add the mushrooms, salt and pepper and cook for about 8 minutes more.

Add the rice and let it cook for a couple of minutes, then add the white wine, let all the alcohol evaporate and then gradually add the vegetable broth (first cover and when we see that there is almost no liquid left, add more broth, repeat the process until the rice is done and with a creamy texture, the approximate cooking time is 18 to 20 minutes).
