Ingredients
- 1 kg. of clean mussels
- 200 ml. fish stock
- 200 ml. of white wine
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 yellow bell pepper, diced
- 1 chopped garlic clove
- 200 ml. of crushed natural tomato
- 1 teaspoon of sweet paprika powder
- Chopped fresh parsley for garnish
- Salt to taste
- Olive oil
How To Make It
Step 1: To prepare our mussels in marinera style we put a pan on the fire with a little olive oil and medium heat and add the onion, garlic and let cook for 2 minutes, then add the peppers (red, green and yellow) stir and let cook for 6 minutes.
Step 2: Add the crushed natural tomato, the sweet paprika, a little salt and cook for 3 minutes.
Step 3: Add the mussels and spread them well, then add the white wine, the fish stock and when it starts to boil, cover the casserole and let it cook for 6 minutes or until the mussels open (stir from time to time but giving back and forth movements to the casserole without uncovering it), once they are open, remove from the heat, serve in a deep dish with the sauce, add some fresh parsley on top and enjoy these delicious mussels in marinera.
Tips To Prepare It
Do not let the mussels cook for too long so that they do not overcook, their cooking time is very short.
We can prepare the mussels in different ways, the most common being to steam the mussels and use their own broth to add flavor to the sauce, another option is to cook the mussels in the same marinara sauce so that they release all their juices in the sauce or we can also use fish broth or seafood fumet.
Another trick we can do to enhance the flavor of our mussels in marinara sauce is to add other ingredients such as smoked bell pepper powder, bay leaves or white wine.
