Ingredients
- 6 whole peeled potatoes
- 200 ml. of cooking cream or single cream
- 2 chopped spring onions
- 2 diced tomatoes
- 1 garlic clove, chopped
- 1/2 tablespoon cumin powder
- 1 tablespoon of butter
- 120 g. grated cheese (the one you like best)
- Chopped cilantro for garnish
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1:
We begin the preparation of our papas chorreadas, for this, in a pot with boiling water, add a little salt and introduce our potatoes (it is important to add salt after the water is boiling, otherwise, it will take longer to boil) and we will cook for 15 minutes or until we see that they are perfectly cooked (cooking time will depend on the size of the potatoes, therefore, when we see that they have been cooking for about 15 minutes, we prick them with a toothpick and if we see that it passes without problems, they are ready, if on the contrary we see that the potato opposes resistance and feels a little hard, we let them cook for a few more minutes) when they are done, we take them out of the water and reserve them.
Step 2:
While the potatoes are cooking, we will prepare the sauce, for this, in a frying pan over medium heat we will add a little olive oil, the tablespoon of butter and let melt, then add the spring onions, garlic and let cook for 5 minutes.
Step 3:
Add the tomatoes, stir and cook for 8 minutes more, then add the single cream or cooking cream, a little salt, a little pepper, cumin, stir and cook for 4 minutes.
Step 4:
Add the cheese, cook for 2 more minutes or until it has melted and remove from heat, then place the potatoes on a plate, cover them with the sauce, add a little fresh cilantro on top and we have ready our delicious papas chorreadas!
Tips To Prepare It
Wash the potatoes very well before preparing the recipe to remove any dirt.
You must add the salt when the water is already boiling, never add the salt before the water boils, since it will take much longer to boil.
