Today we are going to prepare a delicious potato and bacon salad, easy and very quick to prepare, perfect for the summer months, to take to the campsite, to take to the picnic or simply to fill a tapper and take them to work.
This recipe can be taken both warm and cold, for the summer months, I recommend the second option, the truth is that it feels great and is a cool and perfect dish for the occasion, as for the ingredients of the potato salad, it goes a little to taste, we can include the ones we like and vary the recipe to eat different every day, we can add for example tomatoes, boiled eggs, sweet corn, onion, bacon, tuna or ham.
Ingredients
- 4 large potatoes cooked and cut into slices
- 1 red onion cut into julienne strips
- 12 cherry tomatoes cut in quarters
- 100 g. of chopped cooked bacon
- Chopped fresh parsley
- 6 tablespoons olive oil
- 4 tablespoons white wine vinegar
- 1 tablespoon old-fashioned mustard
- 1 crushed garlic clove
- Salt and pepper to taste
How To Make It
Step 1: We begin the preparation of our potato and bacon salad, for this, in a bowl add the cooked potatoes, red onion, cherry tomatoes, cooked bacon, chopped fresh parsley and mix.
Step 2: In another container we are going to prepare the vinaigrette, for this, we add the olive oil, the white wine vinegar, the old mustard, the garlic, the salt, the pepper and we mix.
Step 3: Seguidamente incorporamos la vinagreta en nuestra ensalada, removemos muy bien y ya tenemos lista nuestra rica ensalada de patatas y bacon.
