Ingredients
- 1 kg. of pork ribs, chopped
- 4 potatoes cut into wedges
- 1 onion cut into small squares
- 2 cloves of garlic, chopped
- 1 tablespoon of carne de pimiento choricero (chorizo bell pepper meat)
- 600 ml. of meat stock
- 1 teaspoon of dried thyme (can also be fresh)
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1:
We begin the preparation of our ribs with potatoes, for this, we salt and pepper our ribs and add them in a casserole at medium temperature and with a little oil, we will cook them until they are golden brown and reserve them.
Step 2:
In the same pan, add the onion and garlic and cook for a couple of minutes, then add the pimiento choricero and stir, add the potatoes, stir again and cook for a couple of minutes.
Step 3:
Add the pork ribs, thyme, beef broth, stir and when it starts to boil, cover the pan, lower the heat to the minimum and cook for 30 minutes.
Step 4:
After 30 minutes, remove from the heat and our delicious ribs with potatoes are ready, enjoy.
