Ingredients
- 500 g. / 1.1 lbs of sardines without scales
- 4 garlic cloves
- 1 handful of fresh parsley
- 80 ml / 5 tablespoons of olive oil for the marinade
- Coarse salt to taste

How To Make It
Step 1: We begin the preparation of our baked sardines, for this, in a dish covered with baking paper, we place our sardines, one next to the other, then add a little coarse salt, a little olive oil and take them to the oven at 200 ºC / 390 ºF for 13 minutes or until you see that they are done, this will depend on your oven and the size of the sardines.
Step 2: While the sardines are cooking in the oven, we are going to prepare our garlic and parsley mash, for this, in a mortar add the garlic, parsley, salt, olive oil and mash until you get a texture like the one I show you in the video.
Step 3: Once the cooking time is over, remove our sardines from the oven and place them on a plate, then add some of the garlic and parsley paste and our baked sardines are ready.
Tips To Prepare It
The amount of garlic for the garlic and parsley paste is a bit to taste, it will depend on the texture or flavor you want.
It is not necessary to open the sardines, if you cook them whole as in this recipe, they will be juicier, although if you wish, you can clean them by making a cut in the middle and removing the entrails.
This time, we prepare the sardines in the oven, but you can also prepare them grilled or barbecued, however, if you are going to prepare the sardines on the barbecue, do not remove the scales, as they will help you to prevent them from sticking to the barbecue grids.
Before starting the recipe, remove the scales from the sardines, to do it in a simple way, take a bowl and add water, then submerge one by one the sardines and rub them with your hands so that you remove all the scales.
When placing the sardines in the baking dish, it is important to place them side by side, so that they cook perfectly, never place them one on top of the other.
