Ingredients
- 300 g. white beans (soaked for at least 12 hours, reserve the water)
- 1 chopped onion
- 1 green bell pepper cut into small squares
- 1 red bell pepper cut into small squares
- 2 carrots cut into rounds
- 2 potatoes cut into bite-size pieces
- 1 tablespoon of sweet paprika
- 1 bay leaf
- 1 liter of water
- Olive oil
- Salt to taste
How To Make It
Step 1: We begin the preparation of our stewed beans, for this, in an express pot with a little olive oil and at medium temperature, add the onion and let it cook for 5 minutes, then add the red bell pepper, the green bell pepper and let it cook for 5 minutes.
Step 2: Add the carrots and stir, then add the potatoes, the sweet paprika powder and stir, then add the white beans, stir again.
Step 3: Add the water, the bay leaf and when it starts to boil, cover the pot, lower the heat a little and let it cook for 20 minutes (we must follow the instructions of our express pot since not all of them are the same), after 20 minutes, turn off the heat, wait for the express pot to boil all the steam, remove the lid, remove the bay leaf, add salt, stir and we have our delicious stewed beans ready.
