Ingredients
- 1 whole chicken breast cut into cubes
- 2 cups of long rice
- 2 cups chicken broth
- 1 red bell pepper, diced
- 1 onion, diced
- 2 garlic cloves, diced
- 2 carrots chopped in cubes
- 80 g / 2.8 oz sweet corn, cooked
- 1 teaspoon of curcuma powder
- Chopped fresh cilantro for garnish (optional)
- Salt to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our arroz con pollo, for this in a pot at medium temperature and with a little olive oil, add the onion, garlic and let it cook for a couple of minutes, then add the red bell pepper, carrot and cook for 5 minutes more.
Step 2: Add the chicken, a little salt, a little pepper, stir and cook for 6 minutes or until almost cooked, then add the rice and stir.
Step 3: Add the hot chicken broth, the sweet corn, stir again and when it starts to boil, add the curcuma powder, stir, lower the heat to the minimum, cover and let it cook for 15 minutes (it is important not to uncover the pot during these 15 minutes).
Step 4: After 15 minutes, remove from heat, serve on a plate, add some chopped fresh cilantro on top (optional) and our delicious Venezuelan rice with chicken is ready.
