Ingredients
- 300 g / 10.6 oz / 0.66 lb white beans (soaked for at least 12 hours, reserve water)
- 1 chopped onion
- 2 garlic cloves, chopped
- 1 chopped leek
- 1 green bell pepper cut into small squares
- 1 red bell pepper cut into small squares
- 1 tomato, diced
- 1 tablespoon of sweet paprika
- 1 bay leaf
- 1 liter of water (we will use the same water where the beans were soaked)
- Olive oil
- Salt to taste
How To Make It
Step 1: We begin the preparation of our white beans with vegetables, for this, in an express pot with a little olive oil and medium heat, add the onion, garlic, leek and let cook for 5 minutes.
Step 2: Add the red bell pepper and green bell pepper and cook for 5 minutes, then add the tomato and cook for 4 more minutes.
Step 3: Add the beans and stir, then add the sweet paprika and stir again, then add the water, the bay leaf, cover our pressure cooker and when we hear the hissing sound it emits, lower the heat a little and let it cook for 20 minutes.
Step 4: After 20 minutes, turn off the heat, wait for the pressure cooker to release all the steam, remove the lid, add salt, stir and our delicious beans with vegetables are ready.
