The aji de gallina is one of the most popular dishes in Peruvian cuisine, basically this aji de gallina consists of a cream or sauce made from aji amarillo (chili) to which is added cooked chicken or hen, additionally it has other ingredients such as parmesan cheese, red onion or garlic, among others.

Ingredients
- 1 whole chicken breast, cooked and shredded (add salt to the water during cooking)
- 8 aji amarillo (see tips section)
- 100 ml. of milk
- 1 red onion cut into very small squares
- 1 grated garlic clove
- 100 ml. chicken broth
- 1 loaf of crustless bread soaked in milk
- 1 tablespoon of crushed walnuts
- 100 g. Parmesan cheese
- 1 boiled egg cut into slices
- Black olives for garnish
- Fresh parsley for garnish
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our Peruvian aji de gallina, for it, in a frying pan at medium temperature, we add the oil until hot, then we add the red onion, the garlic and let it cook for a couple of minutes, then we add the chili cream, the sliced bread, the walnuts, the chicken broth and let it cook for about 5 minutes.
Step 2: Remove the sauce and blend in a blender, return to the pan, add the chicken and stir.
Step 3: Then add the milk and finally the Parmesan cheese, cook for a couple of minutes and remove from the heat.
Step 4: We serve on a plate and we add above the cooked egg slices, the olives, the parsley and we already have ready our delicious aji de gallina!
Tips To Prepare It
For this recipe of aji de gallina, we use Peruvian aji amarillo, it is an indispensable ingredient to prepare the recipe, you can find it in Latin stores.
First remove the veins and seeds and cook them in boiling water for 5 minutes, then grind them with a little water until you get a thick cream.
You can use whole milk or evaporated milk.
You can use hen or chicken breast.
To cook the chicken, in a pot with boiling water we add salt, then our chicken and let it cook for 40 minutes, let it cool and discard it.
You can use the chicken cooking water as broth for our aji de gallina.
