One of the classic Venezuelan breakfast arepas, is undoubtedly the arepa de perico, an arepa that is filled with a scrambled onion and tomato which is called perico by the similarity of its colors with the animal of the same name (parrot), this time we will vary a little our arepa and we will prepare it fried instead of roasted as we commonly do on our website, follow our step by step videos, where we will show you the whole process to prepare this simple but delicious arepa.
Ingredients
- 1/2 onion cut into small squares
- 1 tomato cut into small squares
- 2 Eggs
- Salt and pepper
- Olive Oil
- 2 cups pre-cooked corn flour
- 2 1/2 cups of water
- 1/2 teaspoon salt
How To Make It
Step 1: We begin the preparation of our arepa de perico, for it, in a bowl, combine the flour, salt, and water, kneading until the dough is smooth and uniform., take a portion of the dough, roll it into a ball, then flatten and shape it into a circular disc (as shown in the video) and repeat this process until all the dough is used. Heat sunflower oil in a pan over medium heat and fry the arepas until both sides turn golden brown with a crispy texture.
Step 2: While our arepas are cooking, we prepare our perico, for this we add our eggs in a bowl, add salt and pepper and beat, then in a pan over medium heat with a drizzle of olive oil, add the onion and cook 5 minutes, add the tomato, salt, cook 5 minutes more and finally add our eggs, cook them until they are done.
Step 3: Finally, remove the arepa from the pan, let it cool for a few minutes on paper towels, open it and fill it as you like with our perico, enjoy.
Tips To Prepare It
You can vary the perico by adding cilantro or fresh parsley.
This time we have made the arepa fried, but if you like you can make them roasted.
The quantities of perico in this recipe are for one person, in case of more, simply scale the quantities.
