Arepa domino - Arepa with black beans and cheese

We continue bringing the classic arepas of the Venezuelan gastronomy and today is the turn of the arepa domino, so called because of the contrast of color between the white cheese and the black beans that remind the classic board game, follow our step by step videos, where we will teach you the whole process to elaborate this delicious arepa, from the preparation of the beans, to the final preparation of the arepas.
Ingredients
- 500 g. (1.1 lb) of black beans
- 1.5 liters (50 fl oz) of water
- 1 red bell pepper cut into small squares
- 1 green bell pepper cut into large chunks
- 1 small onion, diced
- 1 small onion whole
- 1 chopped garlic clove
- 125 g. (0.27 lb) of bacon
- 1 tablespoon cumin powder
- 1 bay leaf
- Salt to taste
- Sugar to taste
- Olive oil
- 2 cups pre-cooked corn flour
- 2 1/2 cups of water
- 1/2 teaspoon salt
How To Make It
Step 1: We begin the preparation of our arepa of caraota and cheese, for it in an express pot we add the black beans, the water, the whole onion, the green bell pepper, the bay leaf, the cumin, stir and when we see that it begins to boil, cover and cook for 20 minutes (we must follow the instructions of our express pot).
Step 2: Next, we proceed to prepare our arepas, in a bowl, combine the flour, salt, and water, kneading until the dough is smooth and uniform. Take a portion of the dough, roll it into a ball, then flatten and shape it into a circular disc (as shown in the video) and repeat this process until all the dough is used. Place the arepa in a preheated skillet over medium heat and cook for about 7 minutes on one side, then flip and cook for another 7 minutes or until both sides are golden and toasted.
Step 3: While our arepas are cooking, we will prepare the sofrito for the beans, for this, in a frying pan add the onion, garlic and let it cook for 3 minutes, then add the red bell pepper, bacon, a little salt, stir and let it cook for 7 minutes.
Step 4: After 20 minutes, we uncover our express pot following its instructions, remove the onion, the bell pepper, the bay leaf and then add our sofrito, a little salt and cook for 10 more minutes.
Step 5: To finish, add our beans in a pan, add sugar to taste and cook until all the liquid dries, then open the arepa and fill it to taste with our beans and cheese, this way we would have ready our arepa domino, enjoy it.
Tips To Prepare It
You can use the cheese you like the most, traditionally a semi-hard white cheese is used, typical of Venezuela, but you can substitute it with fresh cheese or feta cheese.
For the cooking of the beans, in this occasion we used a fast cooker, but you can cook them in a traditional pot, the cooking time will be approximately 90 minutes.
This time we have sautéed the beans and added sugar, but you can skip this step and fill your arepas directly with the cooked beans, avoid adding too much liquid when filling the arepa.
