The chicken and rice has a thousand and one variations in different cuisines around the world, but with a unique blend of flavors, colors and spices, Colombian arroz con pollo differs greatly from other rice dishes.
While every Colombian home has its own chicken and rice recipe, they all start with the same base, rice, chicken, vegetables such as peppers, onions and the typical beans, and spices such as cumin and achiote, it is an ideal recipe to enjoy with the family since it is usually prepared in large quantities and simply accompanying it with sweet plantains or arepas, we will have a super complete meal.

Ingredients
- 2 cups of long rice
- 1 cooked and shredded chicken breast
- 2 cups chicken broth
- 1 tablespoon achiote
- 200 gr. of crushed tomato
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin powder
- 1/2 red bell pepper cut into strips
- 1/2 green bell pepper cut into strips
- 70 gr. of cooked peas
- 1 carrot, cooked and cut into cubes
- 100 gr. of baby beans or boiled beans
- Salt to taste
- Olive oil
How To Make It
Step 1:
We begin the preparation of our chicken and rice, for this, in a pot at medium temperature add the chicken broth and when it is about to boil add the rice, salt, a teaspoon of olive oil, the achiote paste and mix, when it starts to boil, lower the temperature to the minimum and let it cook for 20 minutes covered or until the rice is done.
Step 2:
On the other hand, in a bowl we will add the crushed tomato, salt, onion powder, garlic powder and cumin, mix and then add the shredded chicken, mix until all the ingredients are integrated.
Step 3:
In a frying pan at medium temperature, we are going to put oil, when it is hot add the peppers and let it cook for about 8 minutes, then add the tomato and chicken mixture and let it cook for 5 minutes.
Step 4:
In a large bowl, add the cooked rice, the chicken with peppers, the peas and beans, the carrot and mix until all the ingredients are combined.
Step 5:
Serve and now we have ready our delicious arroz con pollo!! to enjoy this marvel of Colombian gastronomy.
Tips To Prepare It
To prepare the shredded chicken, in a pot with boiling water and a little salt, cook the chicken breast for 45 minutes, after the cooking time, let it cool and shred it.
