Among one of the most typical desserts of the Asturian cuisine, are the frixuelos, which are a kind of pancakes made from flour, milk, eggs and anise (optional) which are then cooked in a pan with butter, lard or oil until golden brown, they are usually eaten very hot and when serving, they are sprinkled with a little sugar, the truth is that they are a delight.

Ingredients
- 200 g (7 oz / 0.44 lb) all-purpose flour
- 4 eggs
- 500 ml (16.9 oz) milk
- The zest of one lemon
- 3 tablespoons of sugar
- Powdered sugar for decoration
How To Make It
Step 1: We begin the preparation of our frixuelos, for this, in a bowl add the eggs, milk and with the help of a whisk, beat until integrated, then add the flour, sugar, lemon zest, mix again until all ingredients are well integrated, and let the mixture stand 30 minutes.
Step 2: In a frying pan at medium temperature and with a little olive oil, we will add a little of our mixture, we give movements to the pan so that the mixture covers the entire bottom and give us a circular shape (do not add too much because the frixuelos should be very thin) and let cook until the top is almost done (no liquid from the mixture), we turn it over, cook for 1 more minute and remove from the pan (we repeat this process until the mixture of frixuelos is used up).
Step 3: Serve on a plate, add a little powdered sugar and our delicious Asturian frixuelos are ready.
Tips To Prepare It
Use a medium temperature when cooking the frixuelos so that they do not burn, as they are a thin dough, they cook very fast.
You can add 1 tablespoon of aniseed to the mixture.
To prepare the mixture of the frixuelos, all the ingredients must be at room temperature so that they integrate better.
