If you like Mexican food, you can not fail to prepare this birria, a traditional dish from Jalisco that has become very popular in recent years both throughout Mexico and the United States, today we prepare our version using beef and ingredients such as oregano, cinnamon, bay leaf, onion and of course the tomato and chiles that will be the base of the broth, follow our step by step videos and learn how to prepare birria de res (beef birria), a recipe that you will not stop preparing.
Ingredients
- 1 kg. (2.2 lbs.) of veal vacuum
- 1 kg. (2.2 lbs.) of tomatoes
- 1 large onion
- 5 cloves of garlic
- 1 cinnamon stick
- 1 bay leaf
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1 tablespoon black peppercorns
- 3 chiles guajillo
- 2 chiles mulato
- 2 chiles de árbol
- 3 liters of water
- 1 tablespoon apple cider vinegar
- Salt to taste
- Sunflower oil
- Chopped onion to serve
- Chopped cilantro to serve
- Lime juice to serve
How To Make It
Step 1:
We begin the preparation of our beef birria, deveining and removing the seeds from our chiles, for this, in a pot with hot water, we cook our chiles for 5 minutes, remove them from the heat, cool them with cold water and remove the seeds and the main vein.
Step 2:
Then in a pot add a little oil, tomato, onion, garlic and sauté for 5 minutes, add the chiles and cook for a couple of minutes, add the peppercorns, cumin, oregano, bay leaf, cinnamon and cook for 5 more minutes.
Step 3:
Add the vinegar, a glass of water and let it cook for 5 minutes, turn off the heat, take all the ingredients to a blender and blend for a couple of minutes.
Step 4:
We take the mixture back to our pot, add the water, salt and when it starts to boil we add our meat, cover and cook for 1 hour and a half at low heat.
Step 5:
Once the cooking time is over, on one side we remove our meat and fray it and on the other side we pass our broth through a strainer and keep only the consommé.
Step 6:
Finally we serve our birria de res, adding the consommé, a little of the meat, a squeeze of lime, chopped onion and cilantro.
Tips To Prepare It
For this beef birria recipe, you can substitute the beef vacuum for another cut of meat such as beef ribs, hips or goose among others, keeping in mind that a cut with more fat will require degreasing the broth.
The beef birria is spicy but if you are not a fan of spicy, do not add the chile de árbol.
