The mojo picón is a very typical sauce of the Canarian cuisine, it is made with garlic, cumin, sweet paprika, hot peppers or chili peppers, vinegar, salt and olive oil, although the truth is that there are a variety of ways to prepare them, each cook to your taste, but these are the basic ingredients to prepare a good mojo picón.

Ingredients
- 1/2 head of peeled garlic
- 2 pimientas piconas or dried chilli peppers
- 30 ml. (3 tablespoons) of white wine vinegar
- 100 ml. (8 tablespoons) of extra virgin olive oil
- 1 teaspoon cumin grains
- 1 teaspoon of sweet paprika
- Coarse salt to taste
How To Make It
Step 1: We begin the preparation of our mojo picón, for it, in a mortar (the traditional is to prepare it in a mortar, but if you do not have, you can use a grinder) add the cumin, salt, sweet paprika, chili pepper and crush, then add the garlic cloves and continue crushing until you get a paste, then add the white wine vinegar, olive oil, mix everything well until you get a texture like the one I show you in the video and we have ready our delicious mojo.
Tips To Prepare It
For the mojo picón, you should use pimientas piconas, but if you cannot find them, you can use dried chilli peppers.
You can also use cumin grains or cumin powder.
The amount of garlic to prepare the mojo picón is a bit to taste and according to the texture and flavor you want.
