Step 3: In the same saucepan where we infused the milk and over low heat, add the mixture and continue stirring nonstop so that the mixture does not stick and at the same time begins to thicken (it will take a few minutes but gradually takes body), when we get that thick texture (you will see that the grooves of the rods are noticeable in the cream) remove from heat and set aside.

Step 4: Now we are going to elaborate the canutillos, for this, on a flat surface, we place the puff pastry dough and with the help of a pizza cutter, we cut strips of about 1 cm (as I show you in the video) we take 1 canutillo and grease it with a little butter so that the dough does not stick to it, then we take a strip of the dough and wrap it in the canutillo as I show you in the video, repeat the process with all of them and take our canutillos to the oven for 15 minutes at 180 ºC / 356 ºF.

Tips To Prepare It

What can we accompany this recipe with?

Preguntas y respuestas

Is it important to stir the custard mixture constantly while cooking?

Yes, constant stirring will prevent the mixture from sticking to the bottom of the pan and burning, on the other hand it will ensure a uniform and smooth cream.

Does using a different batter affect the texture or taste of the canutillos?

Yes, using a different dough such as shortcrust pastry would give a firmer and less flaky texture, while a dough for empanadillas would result in a softer and less crunchy canutillo.

Can I use skimmed milk to prepare the pastry cream?

Yes, although using whole milk will result in a richer and creamier pastry cream due to its higher fat content, while skim milk will produce a lighter cream that is less rich in flavor.

Is it important to let the canutillos cool well before removing them from the mold?

Allowing the canutillos to cool completely before removing them from the mold prevents them from breaking or deforming when removed from the mold.
