- 3 egg yolks
- 75 g. sugar
- 35 g. cornstarch
- 400 ml. milk
- 1 teaspoon of vanilla extract
- Butter for greasing the canutillo
- Powdered sugar for decorating
How To Make It
Step 1: We begin the elaboration of our canutillos filled with pastry cream for it in a saucepan over medium low heat, add the milk with the vanilla, when it comes to a boil, turn off and remove from heat.
Step 2: On the other hand, in a bowl add the egg yolks, sugar and cornstarch, and with the help of a whisk or electric mixer, beat until obtaining a creamy mixture, then gradually add the infused milk and continue beating until blended.
Step 3: In the same saucepan where we infused the milk and over low heat, add the mixture and continue stirring nonstop so that the mixture does not stick and at the same time begins to thicken (it will take a few minutes but gradually takes body), when we get that thick texture (you will see that the grooves of the rods are noticeable in the cream) remove from heat and set aside.
Step 4: Now we are going to elaborate the canutillos, for this, on a flat surface, we place the puff pastry dough and with the help of a pizza cutter, we cut strips of about 1 cm (as I show you in the video) we take 1 canutillo and grease it with a little butter so that the dough does not stick to it, then we take a strip of the dough and wrap it in the canutillo as I show you in the video, repeat the process with all of them and take our canutillos to the oven for 15 minutes at 180 ºC / 356 ºF.
Step 5: Remove our puff pastry from the oven and let it cool, carefully remove it from the mold and set aside, then we take a puff pastry canutillo and with the help of a pastry bag, we fill it with cream at both ends (place the nozzle of the sleeve halfway and fill it with circular movements until you reach the tip, then move to the other end and repeat the process).
Step 6: Sprinkle with powdered sugar and our delicious canutillos are ready.
Tips To Prepare It
To infuse the milk you can use vanilla extract or vanilla stick.
It is important to grease the canutillo mold with butter so that the dough does not stick.
When removing the pastry balls from the oven, let them cool very well to be able to remove the mold more easily and avoid breaking the puff pastry dough.
