Caponata is a traditional Italian recipe based on fresh vegetables such as eggplant, celery, tomatoes, peppers and onions, which we are going to cook in olive oil and then mix them with other ingredients such as green olives and capers and then, as a last step, season it with vinegar, sugar, salt and pepper.

Ingredients
- 1 eggplant cut into cubes
- 1 onion, diced
- 2 celery sticks cut into rounds
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 yellow bell pepper cut in cubes
- 4 tomatoes, diced
- 16 green olives
- 2 tablespoons wine vinegar
- 2 tablespoons of sugar
- 3 tablespoons capers
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our caponata, for this, in a pan with a little oil and over medium heat add the eggplant, stir, cook for 5 minutes and set aside.
Step 2: Add a little more oil and add the green bell pepper, yellow bell pepper, red bell pepper, stir, cook for 5 minutes and set aside.
Step 3: Add a little more oil, add the celery, cook for 5 minutes and set aside.
Step 4: Add the tomatoes, stir and cook for 5 minutes, then add the onion and cook for 2 more minutes.
Step 5: Add the eggplant, peppers, celery, green olives, capers, stir, then add the sugar, vinegar, a little salt and pepper, stir, lower the heat, cover and let it cook for 10 minutes and our delicious caponata is ready.
