Another of our favorite pancakes recipes, are these delicious carrot pancakes, they are super fluffy and juicy and with a flavor that you will love, they are prepared with very basic ingredients that we always have at home, such as eggs, milk, sugar, flour, among others, plus we will always be able to adapt them to our taste, adding for example spices such as cinnamon or nutmeg.
To prepare these carrot pancakes we have two options, the first is to beat all the ingredients in a bowl and with the help of a few rods, in this case the carrot must be grated and the second option is to add all the ingredients in an electric mixer and grind them until obtaining a homogeneous mixture, in this case it is not necessary to grate the carrots, we can cut them into pieces.
The other point in favor of preparing these carrot pancakes at home, is that if we want we can make them in a healthier way, for this, we must vary a little the ingredients, in the case of sugar, we can replace it with honey, in the case of wheat flour, we can replace it with whole wheat flour or oat flour and in the case of milk, we can replace it with skim milk or some other type of milk such as almond milk, in this way we will eat them with much less calories.

Ingredients
- 200 g (0.44 lbs) carrots, cut into pieces
- 2 eggs
- 100 ml. (3.40 oz) milk
- 150 g (0.33 lbs) all-purpose wheat flour
- 50 g. (0.11 lbs) sugar
- 8 g. (1 tsp.) of baking powder
- 1/2 tsp. cinnamon powder
- Pinch of salt
How To Make It
Step 1: We begin the preparation of our carrot pancakes, for this, in the blender cup add the carrots, milk, eggs, flour, baking powder, sugar, cinnamon powder, pinch of salt and blend for 2 minutes or until we see that we have a homogeneous mixture.
Step 2: In a frying pan with a little olive oil and medium heat, add a little of the mixture of our pancakes and we will cook until bubbles form on the surface of the pancake (1 to 2 minutes approximately) then we turn it over, cook for 1 more minute and remove it from the pan, we will repeat this process until the mixture is finished and then enjoy these delicious carrot pancakes.
Tips To Prepare It
You can prepare the carrot pancakes mixture either in an electric mixer or in a bowl using a whisk, in the latter case the carrots must be grated.
When cooking the carrot pancakes, use a moderate heat so that they do not burn quickly.
