Today we are going to prepare one of the typical sweets of Cuban gastronomy, the classic boniatillo, a dessert that in flavor is very reminiscent of rice pudding, which as its name suggests is prepared based on sweet potato, which is flavored with cinnamon, vanilla, lime and anise, follow our step by step videos and learn how to prepare this delicious and simple Cuban dessert.
Ingredients
- 2 sweet potatoes, approximately 500 g. (1.1 lbs)
- 100 g. (0.22 lbs) sugar
- 100 ml. (0.22 lbs) water
- 1 cinnamon stick
- Zest of 1 lime
- 7 - 8 drops of lime
- 2 egg yolks
- 1/2 teaspoon of aniseed (optional)
- 1/2 teaspoon vanilla
- Pinch of salt
How To Make It
Step 1: We begin the preparation of our Cuban boniatillo, to do this we add water in a pot and bring to heat, when it begins to bubble add the sweet potatoes and let cook 45 minutes or until done (insert a knife into the sweet potato and if it enters easily will be ready), then remove the sweet potatoes from the pot, let cool, peel and mash with the help of a fork.
Step 2: On the other hand, in a pot add the sugar, water, cinnamon stick, lime peel, aniseed and lime drops and let cook for 10 minutes over low heat or until reaching a temperature of 100 ºC / 212 °F.
Step 3: Next we take our mashed sweet potato to the fire, add a pinch of salt and stir, remove the cinnamon stick and the lime peel from our syrup and add approximately 80% of it to our sweet potato, along with the vanilla essence and mix.
Step 4: Finally add the remaining and still hot syrup to the yolks, beat and add them to our sweet potato, mix and let cook for 10 minutes, stirring continuously, and finally remove from the heat, serve and add a little cinnamon powder to taste on top.
Tips To Prepare It
Beat the egg yolks with the still warm syrup to prevent the eggs from curdling when adding them to the sweet potato.
