- 100 g. of cookie
- 60 g. melted butter
- 300 g. cream cheese
- 300 ml. single cream
- 150 g. dulce de leche
- 10 g. neutral powdered gelatine
- 240 ml. hot milk
- 115 g. sugar
- 1 teaspoon vanilla essence
- Dulce de leche for decoration
How To Make Dulce de leche cold pie
Step 1: We begin the preparation of our cold dulce de leche pie, for this, we crush our cookies, you can use an electric grinder or simply put the cookies in a plastic bag and crush with the help of a rolling pin, it is important to crush very well so that the texture is like powder.
Step 2: In a bowl we will add the cookies, melted butter and mix everything very well, then in a mold (20 cm) with parchment paper, we will pour the mixture and spread to cover very well the entire bottom (it should be well compacted) and reserve in the refrigerator.
Step 3: Now let's go with the filling of our pie, for this, in a pot at low temperature, we are going to add the cream, cream cheese, sugar, vanilla essence and stir well until all the ingredients are integrated, then in a bowl, add the hot milk and incorporate the sachet of unflavored gelatin, mix until it is integrated and add to the previous mixture, let it cook over low heat for 3 minutes without stopping stirring, then add the dulce de leche and continue cooking until it is completely integrated and we see a thick texture, remove from the heat and let it rest for 10 minutes.
Step 4: Pour the mixture into the container with the previously prepared cookie base and place the cake in the refrigerator for 5 hours.
Step 5: After 5 hours in the refrigerator, cut a piece, add a little dulce de leche on top and our cold dulce de leche pie is ready to enjoy.
