Today we are going to teach you how to prepare the bolón de verde, one of the typical dishes of Ecuador that is usually eaten for breakfast in the coastal areas of this country, a fried ball made from green plantain or also known as plantain macho, basically consists of preparing a kind of dough with green plantain (previously fried) to which you add cheese, chicharrón or chorizo, to finally fry them, they are a delight.
Ingredients
- 4 peeled plantains
- 150 g. (0.33 lbs or 5.3 oz) diced cheese (whichever you like best, preferably semi-salty)
- Vegetable or sunflower oil
How To Make It
Step 1: We begin the preparation of our bolones de verde, for this, we cut the green plantain as I show you in the video, then in a pot with vegetable or sunflower oil and at medium low temperature, we incorporate the plantains and we will cook them for 10 minutes without browning (that is why it is important to use a moderate heat), once the 10 minutes are over, we place them in a bowl with absorbent paper and let them cool down a little.
Step 2: We add the plantains in a bowl or container and with the help of our hands, we are going to mash them very well, trying to form a dough, then we add a little salt and continue mashing the dough.
Step 3: Add the cheese and continue kneading with your hands, then take a portion of the dough and form a ball, about the size of a golf ball (it should have a compact texture), repeat this step with the rest of the dough.
Step 4: In the same pot where we did the first cooking, we are going to fry the bolones de verde, this time we raise the heat a little and when it is hot, we introduce the balls and cook them until golden brown (about 2 minutes approximately) we remove them from the oil and place them on absorbent paper to remove the excess fat and we have ready our rich bolon de verde.
Tips To Prepare It
To peel the green plantains, make a longitudinal cut (without reaching the flesh of the plantain) and then with the help of your hands or a knife, remove the peel little by little.
