Ingredients
- 2 eggplants chopped in slices
- Grated cheese for melting (I used gouda and provolone)
- 1 onion cut into small squares
- 2 garlic cloves chopped
- 100 ml. of natural tomato
- Oregano to taste
- Fresh parsley to taste
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our eggplants au gratin, to do this, we place the eggplants on a flat surface with absorbent paper, add salt and let stand 1 hour to release all its bitterness.
Step 2: On the other hand we are going to prepare our sauce, for it in a frying pan at medium high temperature, we are going to put olive oil until hot, then we add the onion, garlic and let it cook for a couple of minutes, then we add the natural tomato, salt, pepper, oregano and cook for a couple of minutes more.
Step 3: Take the eggplants, place them in a baking dish and add a little oregano, olive oil and bake in the oven for 15 minutes at 180 ºC / 356 °F.
Step 4: After 15 minutes, remove our eggplants from the oven and add the previously prepared sauce to each slice, the cheese and return to the oven for 15 more minutes.
Step 5: After 15 minutes, remove from the oven, add a little parsley on top and our eggplant au gratin is ready.
Tips To Prepare It
For this eggplant au gratin recipe, you can use the cheese of your choice, as long as it is a special cheese for melting.
You can substitute the parsley for basil, it goes great with this dish.
