Eggs with tomato

Today we will show you how to prepare some delicious eggs with tomato, another of the many recipes with eggs that we can make in a very simple way to eat different every day, preparing them is an extremely simple task, basically we must prepare in a pan a sauce based on onion, garlic and tomato in which we will cook our eggs later.
Ingredients
- 3 eggs
- 350 g. / 12.3 oz of natural crushed tomatoes
- 1 red onion cut into small squares
- 1/4 teaspoon cumin powder
- 1/4 teaspoon of sweet paprika powder
- 1/4 teaspoon cayenne powder
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish (optional)
How To Make It
Step 1: We begin the preparation of our scrambled eggs with tomato, for this, in a pan with a little olive oil, add the onion, garlic and let it cook for 2 minutes, then add the cumin powder, paprika powder, cayenne powder and stir, then add the crushed tomato, a little salt, a little pepper and let it cook over low heat for 8 minutes (cover the pan because at first it usually bubbles a lot).
Step 2: After 8 minutes, uncover the pan, add the eggs (one separated from the other), cover the pan again and cook for 3 more minutes or until the eggs are well done.
Step 3: Once the cooking time is over, we turn off the fire, add some fresh parsley on top, a little salt and our delicious eggs with tomato are ready.

These eggs with tomato can be served with slices of bread, and can also be eaten as a starter, as a snack or even for a delicious breakfast if we want to fill up on energy.
