The gaucho sauce or also known as salsa Argentina or salsa gaucha, is a very popular sauce when preparing barbecues or roasts, its exquisite flavor will make you enjoy much more of your plate of food, its preparation has no mystery, basically consists of an emulsion of a seasoned tomato sauce, a super easy sauce to prepare and that in a few minutes will be ready.

Ingredients
- 400 g. (0.88 lbs) of crushed natural tomatoes
- 1 garlic clove
- 1 handful of fresh parsley
- 100 ml. (3.3 oz) of olive oil
- 1 teaspoon dried oregano
- 1 teaspoon cumin powder
- 1/2 teaspoon sweet paprika
- 1 tablespoon of wine vinegar
- 1 bay leaf
- 1 sprig rosemary
- Salt and pepper to taste
How To Make It
Step 1: We begin the preparation of our gaucho sauce, for it, in a pan add the crushed natural tomato, the sprig of rosemary, the bay leaf and let it cook for about 20 minutes or until the sauce is reduced by half, after the cooking time remove the rosemary and bay leaf and remove from heat.
Step 2: In the glass of the blender we add our tomato sauce, garlic, parsley, cumin, oregano, sweet paprika, wine vinegar, a little salt, a little pepper and grind everything very well, then we add the olive oil little by little and in a trickle so that it emulsifies and our rich gaucho sauce is ready.

You can prepare this gaucho sauce recipe using natural crushed tomatoes from a jar or using natural tomatoes.
You can add a chili pepper to add a little spice.
