- 170 g. wheat flour
- 3 eggs
- 180 g. sugar
- 60 g. butter at room temperature
- 10 g. butter to grease the pan
- Zest of one lemon
- Juice of one lemon
- 40 g. cream
- 1 1/2 teaspoon of baking powder
- Juice of one lemon (for the glaze)
- 100 g. powdered sugar (for the glaze)
How To Make Glazed lemon sponge cakes
Step 1: We begin the preparation of our lemon biscuits, for this, we preheat our oven to 170 ºC (up and down option), then in a bowl add the sugar, butter, lemon zest and with the help of an electric mixer, beat until well integrated, then add the eggs one at a time and continue beating (do not add the next egg until you see that the previous one has been integrated).
Step 2: Add the lemon juice, the cream and continue beating, then add the flour, the baking powder and with the help of a hand whisk, integrate everything very well.
Step 3: In a muffin tin, previously greased with butter, add the mixture (fill a little more than half of each space) and bake in the oven at 170 ºC for 40 minutes.
Step 4: On the other hand we are going to elaborate our glaze, for it in a container we are going to place the lemon juice, the powdered sugar and with the help of a few rods we integrate everything very well.
Step 5: After the baking time in the oven, remove our biscuits and let them cool, then unmold them and when serving add a little of the glaze on top, let them stand for 20 minutes and our lemon glazed biscuits are ready! I hope you enjoy them!
