Ingredients
- 1 plain yogurt (125 ml. / 4.2 oz)
- All-purpose flour (3 scoops of the yogurt cup)
- Sugar (1 scoop of yogurt cup)
- Honey (1 scoop of yogurt cup)
- Sunflower or olive oil (1 scoop of yogurt cup)
- 3 eggs
- 16 g. (1 1/2 tbsp.) of baking powder
- 100 g. (3.5 oz) hazelnuts, peeled and chopped
How To Make It
Step 1: We begin the preparation of our honey and hazelnut sponge cake, for this, in a bowl and with the help of an electric mixer, add the eggs, sugar and beat for 7 minutes (it is important to beat for the indicated time to obtain a fluffy sponge cake), then add the yogurt, oil and honey, continue beating for a couple of minutes.
Step 2: Add the flour, the baking powder and with the help of a hand mixer, mix until well blended (we switch to hand mixers, because if we use the electric ones, the mixture of flour and baking powder can jump through the air).
Step 3: We add the hazelnuts and with the help of a spatula we integrate very well, then, in a previously greased and floured mold or covered with baking paper, we add the mixture and take it to the oven for 50 minutes at 170º C / 338 ºF (each oven is a world of its own, therefore, I recommend to prick the cake with a toothpick once finished cooking, so if it comes out clean, it means that our cake is ready, otherwise, if you see that the toothpick comes out a little stained with the mixture, cook a few minutes more).
Step 4: After the cooking time, remove our cake from the oven, let it cool for a few minutes, unmold it and transfer it to a wire rack, let it rest for 15 minutes and our delicious honey and hazelnut cake is ready, enjoy it.
Tips To Prepare It
For this recipe of honey and hazelnut sponge cake, use a natural yogurt without sugar.
Remember that the measure to use for the flour, sugar, oil and honey, is the same cup of yogurt with the amounts that I indicate.
It is important to beat the eggs and sugar for the indicated time, in this way we put air into our honey and hazelnut cake to make it fluffy.
Each oven is different, therefore, at the end of cooking the honey and hazelnut cake, I recommend to prick it with a toothpick, if it comes out clean, it means that our cake is ready, otherwise, if you see that the toothpick comes out a little stained with the mixture, cook a few more minutes.
It is important to let our honey and hazelnut cake rest (once removed from the oven) for 15 minutes on wire racks before making the first cut.
