One of the most traditional recipes if we talk about desserts and those that take us to the kitchens of our grandmothers, is undoubtedly the leche frita, a dessert of Spanish cuisine that has gained popularity over time, basically consists of a dough made from milk, sugar and flour, which is then passed through egg and flour to finally fry it, obtaining a dessert with a crunchy texture on the outside and very creamy inside.
Ingredients
- 1 liter / 33.8 oz of whole milk (divide in 2, one part of 250 ml / 8.45 oz and the other part of 750 ml / 25.35 oz)
- 120 g. (4.2 oz / 0.26 lb) cornstarch
- 120 g. (4.2 oz / 0.26 lb) sugar
- 1 cinnamon stick
- 1 piece of lemon peel
- 3 beaten eggs for batter
- 50 g. (1.76 oz / 0.11 lb) of wheat flour for breading
- Sugar for breading
- Sunflower oil
How To Make It
Step 1: To prepare our leche frita, the first thing to do is to place a pot on the fire and in it we will add 750 ml of milk, sugar, cinnamon stick, lemon peel and let it cook over medium heat for 10 minutes, then remove from heat, remove the cinnamon stick and lemon peel.
Step 2: In another container we are going to add the remaining milk (250 ml) the cornstarch and with the help of a whisk, mix very well until the cornstarch is completely dissolved in the milk, then we incorporate this mixture into the previous mixture, stir very well, bring to the fire (medium heat), cook until it takes a thick texture and remove from heat (it is very important not to stop stirring at any time so as not to form lumps).
Step 3: Add the mixture in a bowl, let it cool completely, cover it with plastic wrap and put it in the refrigerator for at least 12 hours.
Step 4: After 12 hours, take the leche frita mixture out of the refrigerator and cut into square pieces, then dip each piece in flour, then in egg and fry in plenty of oil over medium heat until golden brown, then remove from the pan, place on absorbent paper to remove excess fat, coat in sugar and now we just have to enjoy this delicious fried custard.
Tips To Prepare It
It is very important that the leche frita rests for the specified time so that it takes on the necessary solid aspect to be able to batter and fry it.
You can add a little cinnamon powder at the moment of serving or make a mixture of sugar and cinnamon and batter after frying the leche frita.
You can add a touch of vanilla essence to the milk mixture.
What can we accompany this recipe with?
Normally the leche frita is eaten alone, but we can also get creative and accompany it with other ingredients such as vanilla ice cream, jams, syrups, among others.
