Tips To Prepare It
It is important that all the ingredients to prepare this magdalenas recipe are at room temperature.
Never open the oven when the magdalenas are baking.
When adding the sugar to our magdalenas to bake them, it is important to add only a minimum amount, because if we overdo it, this can cause the magdalenas not to rise during baking.
If you like the magdalenas with a top, it is important that you use a high temperature (220 ºC) and they must have rested in the refrigerator for at least 2 hours, the shock between the cold and the heat, is what makes the top form in our magdalenas, if on the other hand you want them without top, use a low temperature, 170 ºC approximately (it will depend on each oven).
It is important to use the exact amount of ingredients, never prepare a recipe adding quantities by eye.
When pouring the mixture into the molds, it is important to cover only 3 quarters.
Both the flour and the yeast must be previously sifted.
For the magalenas to be fluffy, they must have air inside, so it is important to beat the eggs, sugar, honey and salt until the mixture whitens.
You can also flavor it with lemon zest.
Use a muffin pan so that they rise upwards and not sideways.
