Ingredients

  • 230 g. (1 3/4 cups) all-purpose wheat flour
  • 130 g. (1 1/2 cups) oat flakes
  • 160 g. (3/4 cups) sugar
  • 100 g. (1 cup) grated coconut
  • 150 g. (2/3 cups) butter at room temperature
  • 2 tablespoons of honey
  • 60 ml. (1/4 cups) boiling water
  • 8 g. (2 teaspoons ) sodium bicarbonate of soda
  • 1 pinch of salt

How To Make It

Step 1: We begin by preparing the dough for our cookies, for this, in a bowl add the flour, oatmeal, sugar, grated coconut, salt and mix well until well blended.

Step 2: In a saucepan over medium low heat, we will incorporate the butter, honey and let melt, stirring occasionally to integrate (without boiling), when it is perfectly integrated, remove from heat and set aside.

Step 3: In a bowl add the boiling water, the baking soda and mix until blended, then add this mixture to the reserved butter and honey mixture and stir until blended.
