Today we are going to prepare a delicious pisto manchego, a very traditional dish of Spanish cuisine that is made with vegetables such as onion, tomato, zucchini and peppers, among others, is perfect to accompany many food dishes such as chicken or fish, also its preparation could not be simpler, basically consists of preparing a fried with various vegetables that are cooked for about 40 minutes obtaining an incredible flavor and texture, it is also a very healthy dish and low in calories.

Ingredients
- 1 onion cut into small squares
- 1 garlic clove, chopped
- 1/2 red bell pepper cut into small squares
- 1/2 green bell pepper cut into small squares
- 1/2 zucchini cut into small squares
- 200 ml. of crushed natural tomato
- 1 fried egg for plating
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1:
We begin the preparation of our pisto manchego, for it, in a frying pan at medium temperature and with a little olive oil, we will add the onion, garlic and let it cook for a couple of minutes, then add the red bell pepper, green bell pepper and cook for 10 minutes more, then add the zucchini, crushed tomato, a little salt, a little pepper, stir and let it cook over low heat for 40 minutes or until we see that there is no liquid remains of cooking.
Step 2:
After 40 minutes, remove from heat, pour the pisto on a plate or bowl, place a fried egg on top and we have ready our delicious pisto manchego.
Tips To Prepare It
For this recipe of pisto manchego, we use zucchini, if you don't have, you can substitute with eggplants.
You can use crushed natural tomatoes or blanch tomatoes and then grind them in the blender.
