Ingredients To Prepare Pisto manchego
1 onion cut into small squares
1 garlic clove, chopped
1/2 red bell pepper cut into small squares
1/2 green bell pepper cut into small squares
1/2 zucchini cut into small squares
200 ml. of crushed natural tomato
1 fried egg for plating
Salt and pepper to taste
How To Make Pisto manchego
Step 1: We begin the preparation of our pisto manchego, for it, in a frying pan at medium temperature and with a little olive oil, we will add the onion, garlic and let it cook for a couple of minutes, then add the red bell pepper, green bell pepper and cook for 10 minutes more, then add the zucchini, crushed tomato, a little salt, a little pepper, stir and let it cook over low heat for 40 minutes or until we see that there is no liquid remains of cooking.
