Ingredients
- 330 g. (11.6 oz / 0.73 lb) pumpkin puree
- 300 g. (10.6 oz / 0.66 lb) all-purpose wheat flour
- 200 g. (7 oz / 0.44 lb) sugar
- 100 g. (3.5 oz / 0.22 lb) brown sugar
- 1 egg at room temperature
- 112 g. (4 oz / 0.25 lb) of tempered butter
- 1 teaspoon baking powder
- 1 teaspoon of baking soda
- 1/2 teaspoon of nutmeg powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ginger powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- Powdered sugar for garnish
How To Make It
Step 1: We begin the preparation of our pumpkin cookies, for this, in a bowl add the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, salt and mix everything well to integrate.
Step 2: In a bowl add the butter, white sugar, brown sugar, egg and with the help of an electric mixer, beat until the ingredients are well blended, then add the vanilla, pumpkin puree and continue beating until blended.
Step 3: Add the flour mixture that we had reserved and with the help of a spatula, mix very well.
Step 4: Take a portion of the cookie mixture (you can help with a cookie cutter or a spoon, always trying to give a circular shape as shown in the video) and place them on a baking sheet lined with parchment paper, always leaving space between them so that they do not stick when baking, once we have placed our cookies on the tray, we take them to the oven at 180 ºC / 356 ºF for between 15 and 18 minutes or until they take a golden color (cooking time will depend on each oven).
Step 5: Remove our pumpkin cookies from the oven and let them cool for about 10 minutes (do not handle the cookies until they are cool because they come out somewhat soft and you can spoil them) once they are cool, remove them from the baking sheet and place them on racks, let them stand a few more minutes, then add a little powdered sugar on top and we have ready our delicious and fluffy pumpkin cookies.
